Grilled Flank Steak Pinwheels

Summer is coming up and that means grilling. I know here in Texas we love our steaks. Want to impress your family and friends. Try this easy recipe and see the jaw's drop.

The mouth watering steaks come in at 260 calories per serving.

5 adult servings
1 1/2 lb flank steak
1/4 cup red wine
2 tsp low sodium soy sauce
1 red onion , thinly sliced (small)
1 tbsp balsamic vinegar
1 tbsp cold water
10 fresh spinach leaves (large)
1/3 cup shredded mozzarella cheese
1 Lightly pound steak and score on both sides with a knife. Marinate steak in wine and soy sauce for 1 hour.
2 Remove steak from marinade and pat dry. Discard marinade and lay steak on a flat surface.
3 Light a grill or start a charcoal fire.
4 Separate onion slices into rings. Place in a skillet along with vinegar and water. Bring to a rapid boil.
5 Remove from heat, cover, and let sit for 5 minutes. Drain onion rings.
6 Place spinach leaves over the flank steak, topping with onion rings.
7 Roll the steak tightly towards you, tucking meat closely around the vegetables. Tie tightly at 1-inch intervals with kitchen string. Cut the steak crosswise into 5 equal pieces.
8 Grill 4 to 6 inches from medium-hot coals for 4 to 5 minutes per side, or to desired doneness, turning once. When almost done, sprinkle top of each pinwheel with some of the cheese. Continue to grill for another minute, until cheese melts. Serve immediately.

Gazpacho with Shrimp

Always wanted to try gazpacho? Ever wondered what it was? Well, gazpacho is a cold Spanish tomato based raw vegetable soup. Gazpacho is mainly served during the summer months, due to its cold temperature and acidic taste.
This gazpacho is super lite and refreshing for those hot summer months.


This recipe will serve 8 and is only 60 calories per serving.
6 cups unsalted tomato juice
tbsp red wine vinegar
1 tbsp minced garlic
1 cup medium green bell peppers , finely chopped
1/2 cup chopped red bell peppers
1 1/2 cup chopped tomato
1/2 cup fresh chopped onion
1 cup fresh chopped green onion
1 tsp ground basil leaves
1 tsp oregano leaves
1 pinch hot pepper sauce
1 pinch salt and pepper (to taste)
1lb Shrimp,cleaned, raw, small , cooked and peeled
1 In a large bowl combine the tomato juice, vinegar, and garlic. In another bowl mix the green pepper, red pepper, tomato, onion, and green onion, and add half the vegetable mixture to the tomato juice mixture.
2 Place the remaining half of the vegetable mixture in a food processor, and process until it is smooth. Add to the tomato juice mixture. Stir in the basil, oregano, hot sauce, salt, pepper, and shrimp.
3 Cover and refrigerate overnight, or wait until well chilled.


Banana Stuffed French Toast

Yum, yum, yum. French toast is already very good but banana stuffed french toast?? My word!! It is to die for!! Worried about the calories?? No need to it's only 200 calories per serving.


Yes people that picture above is only 200 calories!

What you will need

This recipe will serve 4


Cooking spray
2 eggs , beaten
1/2 cup fat free milk
1/2 tsp vanilla extract
2 pinch ground cinnamon
4 piece Bread, French, small slice , cut one inch thick
2/3 cup Banana, fresh, slices , thin
4 tbsp powdered sugar , sifted
4 tbsp Syrup, pancake, lite , or maple syrup
Chopped nuts and whipped cream or optional and are not added to the calories


1 Cover a baking sheet with foil. Lightly spray foil with cooking spray. Beat together egg, milk, vanilla, and cinnamon in a shallow bowl. Set aside.
2 Cut a pocket horizontally from the top crust to the bottom crust in each slice of bread. Fill pockets with banana.
3 Dip bread into egg mixture. Be sure to coat both sides. Place on the baking sheet.
4 Bake in a 400 degree F oven for 10 to 12 minutes or until golden brown. Turn once. Sprinkle with powdered sugar or serve with syrup.

Greek Chicken

With summer officially on it's way in only 4 weeks. (June 21st) This chicken recipe is just right.
It's a light summer dish seasoned with oregano and lemon slices.  Not only is it delish but it is super easy to make.

How refreshing does this look?!?!



This dish will serve 6 adults

2 fresh lemons
Cooking spray
6 chicken beast ( boneless skinless)
2 tbsp extra virgin olive oil
1 tbsp ground oregano
 
1 Cut 1 lemon in half. Slice the other lemon thinly and set aside.
2 Preheat oven to 425 degrees F. Lightly coat a shallow baking pan with olive oil-flavored cooking spray.
3 Place chicken in pan and brush with extra-virgin olive oil and juice from halved lemon. Drizzle with oregano and lemon slices.
4 Bake chicken for 30 to 45 minutes or until chicken is no longer pink in the center when cut with a small knife.
5 Remove from the oven and serve hot.

Chocolate Chip Zucchini Brownies

So I have been wanting brownies really bad but not all the extra calories and such that come up with them. I mean who doesn't like brownies?!?!? Warm, moist, chocolaty . Mm mm!!!
My grandma told me about this recipe years ago.


These brownies are amazing!!

If your looking for other healthier alternatives for brownies you should really give these chocolate chip ones a try!

Chocolate Chip Zucchini Brownies

1 1/2 cups granulated sugar
1/2 cup canola oil
2 cups all purpose flour
1/4 cup cocoa
2 cups shredded zucchini
2 teaspoons vanilla extract
1 teaspoon salt
1 1/2 teaspoons baking soda
1 cup chocolate chips

1. Preheat oven to 350 degrees F.  Grease an 8 x 11 baking pan with cooking spray, set aside.

2. In a stand mixer, combine sugar, canola oil, and flour, combine until mixture resembles wet sand. While mixing, on low, add cocoa, zucchini, vanilla extract, salt and baking soda. Mix until well combined. Stir in the chocolate chips.

3. Pour brownie batter into prepared pan and bake for 25-30 minutes or until a toothpick comes out clean and the brownies are set.

4. Cool on a wire rack. Cut brownies into squares and serve.


Makes about 16 brownies
